Ever heard of Torishiki? It is one of the most difficult Yakitori restaurant to get into. Gallus is the sister restaurant to Torishiki right next door. The origin of chicken, marination, type of coal, and grilling methods are very similar, if not the same as Torishiki. Yet, comparing the two restaurants will not do justice to Gallus. Upon entering this yakitori shop, the store has a modern ambience with a dark polished counter bar, leather seats, rather than a traditional yakitori house. The chicken liver is one of the softest I have had, while the cartilage (nankotsu) was tender, full of juice and flavor. Other items not to miss are the shoulder (kata), heart (hatsu), and sori. If you are unsure what to order, do not worry, there is a set menu as well. Most interestingly, this restaurant does a brilliant job of pairing wine with yakitori. Since yakitori is grilled on coal and imparts a smokey rich flavor, new world wines will heighten your dining experience.
